Vegan Chocolate Banana Muffins

Is it just with me or do the bananas always get super ripe even before I get to eat them? I like to buy them when they are still a bit green to prevent this from happening however they still seem to get ripe super quick. This is where this awesome chocolate banana muffin recipe comes in handy. Especially because the riper the bananas the sweeter the muffins as I tried to stick to the natural sweetness of the bananas in this recipe rather than adding a whole lot of other sugars into it.

(Maybe wait till the bananas go black before making this ahah)

May I say that I was actually quite proud about the fact how these muffins turned out as I came up with the recipe by myself. I was inspired by another recipe to which I reduced and increased the ingredients so much that it no longer looked like the original recipe but the muffins still turned out so gooood. Also since the muffins are vegan, just like you can veganise any recipe you can also unveganise any recipe dependant on how the lifestyle you follow so see this fabulous recipe aimed at everyone. Other than that lets get into it or how they say with food lets dig in…

For 6 muffin servings (it is up to you if you are sharing them or eating them all hehe)

2 large or 3 medium ripe bananas
2 tablespoons golden syrup
1 1/2 tablespoon coconut oil or vegan butter
1 tsp vanilla extract
1 cup spelt flour or plain flour
1/8 cup cocoa powder
1/2 tsp baking soda
1/2 tsp baking powder
pinch of salt

In a bowl mash up the bananas with a fork and then add the golden syrup, coconut oil and vanilla extract and continue to mix it all together. Then in a separate bowl mix all of the dry ingredients together. Afterwards bring both the wet and the dry mixture together and fold them in. The only thing left to do is to divide them into 6 muffin cases and then pop them in the oven for 30 minutes at 200 degrees. However halfway I did take the muffins out to switch the side of the tray so that they would bake evenly.
Also another thing to note is that everybody’s oven is different so it may take longer to bake your muffins or even a shorter time to bake (don’t take my word for it basically).
